Recipe for the Weekend–Brown Sugar Oatmeal Pancakes
I love breakfast. I wake up thinking about breakfast. And on the weekends, I ski. Sooo, I need a good hearty breakfast that will give me plenty of energy. These guys are a perfect variation to regular pancakes, and will give you energy to hit a few extra runs before you head to the lodge for lunch. If you aren’t a skier, well, these are still great. They taste sweet, so your kids will like them too. Serve them up with hot syrup and bacon. And if your my husband, you will want and egg or two as well. And well, if you were my husband, you would feel that there really is no actual need for pancakes anyway…bacon and eggs are sufficient. But, this mama is cooking them anyway. So here you go.

PPS. I should probably combine wet and dry ingredients separately, but come on, they’re pancakes. One bowl, all ingredients. Stir. Cook. Eat. Ski.
Ski Mama’s Brown Sugar Oatmeal Pancakes
1 egg, beaten
2 T. oil
1 c. milk
1/2 c. wheat flour
1/2 c. white flour
1/2 tsp. salt
1/2 tsp. baking soda
1/3 c. brown sugar, packed
1/2 c + 2 T quick oats
Combine ingredients, and cook pancakes as desired. There you have it. Send me your pics if you want!
